Apricot Preserves

Apricots embrace many types of herbs and spices but our favorite combination is apricot and vanilla. The vanilla enhances the natural flavor of the apricots without overwhelming it.  
Many of our clients serve it with flourless chocolate cake and unsweetened cream. It's lovely served over Greek yogurt with chopped pistachios, almonds or walnuts.  
This is a preserve we make during the summer when we can find local apricots at the farmers market, which can be challenging. The apricot trees bud early when we can still get a frost. If we do, it kills the buds  and hurts the crop.
