Blood Orange Preserves

Blood oranges have a delicate orange flavor with a hint of berry. We add white currants, which are high in pectin and acid, to our blood orange preserves, to help the  gel, add tartness and accemt the berry flavor.  
This preserve is for those who believe bitterness is an important compliment to sweet, sour and salty items. The blood orange preserves has a touch of bitterness from the pith, which we leave attached to the peel for a toothsome product. These preserves are great on bread products, along side a piece of pound cake or in a Sicilian style Crostata.
