Hazelnut or Walnut Dark Chocolate Biscotti

This is a classic biscotti with no fat other than from the egg yolks and the shards of chocolate that we cut by hand. It's crisp and sturdy with bursts of chocolate and crunchy hazelnuts.  It is meant to be dunked in a glass of Vin Santo, coffee or tea.  
These are made to order with 36 hours advance notice.  They can also be made with walnuts and are equally delicious. 
 
One order will consist of no less than 3/4lb of biscotti or 25 cookies per batch, depending on thick I cut them.
