An interesting cinnamon scented almond biscotti that was created for Lent and is still made all over Sicily and some places in Italy.
The original version had no fat and only egg whites, to signify giving up luxuries for Lent. Our version has butter and brown sugar.
Like most cookies with butter, they can lose their fresh flavor in as little as 12 hours. It's best to keep them in the freezer and defrost a few at a time when you want to enjoy them. They freeze and defrost extremely well. Just set them out on a plate, unwrapped so they don't develop condensation.
