A strawberry preserve that is cooked briefly so as to retain the delicate nature of the flavor.
Pectin NH is sets with calcium, not sugar. It allows us to cook this preserve for about a minute while creating a soft gel and keeping the amount of sugar below the amount of fruit. Traditional high methyloxcate pectins (like Ball Traditional) require much more sugar to set than we use.
Since strawberries are so sweet we add lemon juice and peel to brighten the flavor and give it a more complex texture.
We use strawberries from our State of Illinois, Michigan and Wisconsin.
buying locally sourced strawberries allows us to use strawberries at their peak ripeness. Some of our favorites are Jewel, Early Glow and Seascape.
